Curried Sweet Potato Cakes

When we were first wed, my new groom was a wee bit apprehensive of my wild and diverse cooking style. I have gradually eased him into new spices and flavors. It makes my heart smile when he enthusiastically requests some of these once mysterious culinary creations of mine.

One of his new found favorites are curried sweet potato cakes. I wish I could take full credit but I stumbled upon this recipe online. I have switched it up a bit as follows:

Grate the sweet potatoes coarsely.

In a separate bowl mix the flour, sugar, brown sugar, baking powder, cayenne pepper, curry powder, cumin, and salt and pepper. Add the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny; if too stiff, add more milk.

Heat up skillet to about 375 degrees. Spray a generous amount of non stick butter spray. Drop in the batter by tablespoons and flatten. Cook for several minutes on each side until golden.

Enjoy!
